Miscommunications and Muffins




We have lots and lots of house stuff going on these next few days. As you can imagine. There are meetings with insurance agents, the bank, the realtor... and then the 5-hour home inspection we need to be present for (and simultaneously get bids from companies on repairs that have to be done immediately). The home inspection was set for today but had to be rescheduled this morning due to realtor miscommunication. I had taken the day off and everything.

Maybe I need to take the realtors/inspectors/repairmen muffins to help speed this along and get everyone reading their texts and emails. Or maybe not. We are stress eating them kinda quickly. Ha!

Do yourself a favor and make these Streusel Crumb Blueberry Muffins. Go preheat the oven now. Seriously. I don't even like blueberries, but these are incredible! Perfect. Everything a muffin should be... and more.

Many pictures to come... just as soon as I can get in the house. Tomorrow, hopefully? 

In the meantime, happy Tuesday. If you were close, I'd offer you a muffin and coffee and drive you by the house....

These look yummy! Sorry things are complicated on the house front...but hopefully soon (and very soon!) all will be settled and the real work can begin ;)

And of course I would never refuse a muffin and coffee. Those muffins are delicious!

The process of buying a house was one of the most stressful things I ever experienced. I learned that I had to stay on top of every vendor/service person involved and manage them in order to keep things moving, even down to yanking my realtor out of bed when he slept through the start of my home inspection. But, in the end, you have your house and a plot of earth to call your own. It's all worth it. Can't wait to see interior pics!

Brin--oooh, yes! I see more muffins in my future. I've recently been doing banana/oat muffins--with applesauce to replace any fat. Only an egg adds some but amazingly, 1 beaten egg, 1 c. of mashed banana, 1/2 c. applesauce, 1/4 c. skim milk added in a well of 1+1/2 c. wholewheat flour, 2 tsp. baking powder, 1 tsp. baking soda, and 1 c. raw oats, 1 tsp.cinnamon, along with 1/4 c. sugar + 1/4 c. Stevia in the Raw, baked at 400 for 16 minutes--is making a pretty awesome, very low fat, and really moist, tasty muffin. Even adding 1/2 c. of dark semi sweet chocolate chips makes for a little over 100 calories for 1 muffin and the recipe makes 15. I'd noticed an addiction of mine to those Belvita Breakfast "cookies"...and I thought, "I need to do something different and cheaper---without strange things I can't pronounce added!" Hey--even hubby eats these muffins...and he's hard to change from " the old to the newer"!! I'd gotten away from baking except at holidays, but these got me toward my oven again.
Still--yours are going on my list soon..especially with yummy, wholesome blueberries!
