Cheddar Comfort

Not home. Not home and haven't been for a couple of days now. But I want to be. I'm back in the city, working a job I swore I'd never take. They couldn't pay me enough to take that job if they had all the money in the world, I think I said. Then they called with a number and there I went, taking the dumb job. I truly hate it. And I miss my crazy house. I miss sleeping with the windows open. I miss picking fresh, organic mint every morning for my iced tea. I miss watching blue birds eat my stale bread. I miss the slow, dream-like pace of Freeman House.

I want to run home. But I can't. Not yet. So how about a little cheddar comfort tonight? I think it's the only way to go....

I've only recently become a big fan of risotto. And I mean, a BIG fan. Sure, you have to stand around and stir until your arm falls off into the pot, but that's what I love about cooking anyway: I have to stand still. I have to be there. (I think I'm the only gal in the world who turns up my nose at bread makers. Why in the world would someone not want to knead bread? It's so relaxing to me. But then I've always been a bit off, you see.)

Anyway. Risotto. I love stirring it and I love eating it. If you've never tried either - at least not at home - maybe you should. Honest. It's a great way to get some veggies and some creamy, naughty-feeling food down all at once.

My favorite recipe for risotto, thus far, is Nigella's. I just love her. And I just love her Three Cheese Risotto. I don't pay attention to the kinds of cheeses I have, I just use whatever's in the fridge. It's always good. All by itself. It's a simple, satisfying, lovely supper. I'm sure any of these would be, too.

So. If you're thinking of ever making this and live near Fort Worth, Texas, please email me so I can invite myself over. I'll do all the stirring and all the dishes and everything. But you'll have to ignore me if I tear up or nod off in my bowl. Been a crazy few weeks, and lately I've just been in need of a little cheddar comfort....

Thanks for the recipe, from a fellow nose-turner-upper at bread machines! I've never tried risotto, but anything with three kinds of cheese can't be bad! Mmm.

hmm...I've never had risotto, but with all that cheese I bet my family would love it!! Thanks for recipe and good luck with your "i'm never taking it" job.

Aww...too bad you can't just stay at Freeman House but sometimes jobs do call you.
I'm not supposed to have cheese so I guess I won't be trying this dish but it looks oh so good!

Risotto is so yummy! I've been making the same recipe for years; I should try a new one. I should try your favorite!
Can't wait 'till your back in your garden and posting about it--no pressure! Spring fever has hit me, but we keep waking up to snow up here--ughh.

I love risotto. We went to Italy this time last year and I lived on it the whole time we were there, along with pasta and bread! What deliciousness!

Looks yummy ... but what is 400 g of risotto and 100 g of cheese? Don't know what that equals in my measurements. Can't wait for your cookbook ... do you know when it will be done??? Thanks for your blog.

Risotto is something I've never eaten. I don't think there is any in my corner.

The extra funds in the checkbook will be welcome as you continue your work at Freeman House. Perhaps you'll meet some interesting people, too, while on this "they couldn't pay me enough" job of yours. Hope that you're back in your own home very soon.

I've never had risotto either but you sure do make it sound good! Hubby bought me a bread machine years ago and I've never used it, I too love the kneading part, great minds think alike again! I've posted a "Blogging for Boomer" challenge, I hope it adds to the donations. Hope your able to return home very soon!

That looks really good. I love cheese AND risotto, so I think I'm in luck here! Sorry you are so tired & homesick! Hopefully the job will go by fast and you can get back home soon!

Oh my, I love risotto. Giada has a couple of good recipes that I enjoy. One is risotto with peas and mushrooms. Yummy, and its a meal in itself.

Here's another one of Giada's, thats a little different. Its fantastic.
