To Do List

Put "eat chocolate" at the top of your To Do list.
That way, you'll get at least one thing done every day.


Eat chocolate chip pecan pie today? Check.
Now I just need the recipe....

I'm almost embarrassed to say so, but chocolate isn't my thing like it is with so many women...salt is! Can you believe that? I like chocolate, I just don't crave it...not good at. All.

In KY, we call it "Derby Pie" and this one came from a woman named "Candy Bethany". I don't know her and I got this from my mom.

You're welcome (grin).

4 eggs
3/4 c sugar
1/4 c brown sugar
1 c white corn syrup
1 stick butter
1 cup choc chips
1 cup pecans
1 tsp vanilla
1 tbsp flour

Beat eggs. Melt butter. Mix all ingredients together. Pour into UNBAKED pie shell (your recipe or favorite frozen variety). Bake 45 minutes at 350. Makes 2 pies (but I like to 1 1/2 it for really full pies).

Serve with Haagen Daz Vanilla Bean (that's not part of the recipe...just my fave way to eat.)

Derby pie and chocolate chip pecan pie are not the same. Here's chocolate chip pecan. The quality of your vanilla really makes a difference. The store bought stuff I used here for Christmas wasn't nearly as good as the homemade stuff I use in the Bul. Mexican vanilla would probably be good.

1 unbaked pie crust
3/4 cup Corn Syrup
3 eggs
1/4 cup sugar
1/4 cup firmly packed brown sugar
¼ tsp salt
2 tablespoons butter, melted
1/2 teaspoon Pure Vanilla Extract
2 cups chopped pecans, toasted if desired
1 cup semi-sweet chocolate chips (add 1/4 to 1/2 cup for chocolate lovers)
Preheat oven to 350°F.
To prepare FILLING: Combine corn syrup, eggs, sugars, salt, butter and vanilla in medium mixing bowl until well blended. Stir in pecans and chocolate chips.
Pour into pie crust.
Bake on center rack of oven for 45 to 55 minutes, or until pie appears barely set.
Cool for 2 hours before serving.
Goes well with ice cream or whipped cream

Enjoy! It's one of my favorites!! (BTW: this is MY adaptation, you won't find it anywhere else easily.)

BTW: the Derby pie recipe sounds delish, it's just more of a "baked good" type pie, maybe a bit more "cookie-ish?" than the normal chocolate chip pecan. My F-I-L is from Kentucky and he had my pie and said it wasn't the sam thing as Derby pie, but he said he liked both of them. (I asked because someone from Tennessee told me that's what I was making.) So I think they are probably both just as good in their own ways, just they aren't the same.
